
Continuing on from their award-winning beef products, two new small good products were introduced to their range – 2GR Pastrami and Bresaola.
The 2GR Pastrami uses 9+ wagyu brisket with a brine made of salt, curing sugar, sugar, and pickling spices which the meat is soaked in for 5-7 days. After the drying and dehydration phase, the meat is left with a fine, soft texture, and then cut into blocks before salt rub is applied, before being smoked and packaged in their 2GR sleeve. The 2GR 9+ marbled briskets produced the most decadent high-quality pastrami on the market.
Next up, the new 2GR Bresaola was introduced, which is made from specific cuts of the famous 2GR Wagyu. Soaked overnight in red wine and then rubbed with coarse sea salt, juniper berries, and spices, the product is individually wrapped, netted, and cured for 5-7 days then dried. The result is a bresaola with a melt-in-your-mouth creamy texture, deep cherry red color, and wagyu flavor.

Next up, Banister Downs Dairy (BDD), Hancock Prospecting’s dairy partner, excitedly shared an early preview of some of their new products in their range.
Listening to feedback from customers, BDD announced their new Lactose-Free milk, which has been processed naturally to break down the lactose sugars and make the milk comfortable to digest for anyone with lactose sensitivity. This will be available in their 745ml glass bottle, and to complete their glass bottle range will also have their Award Winning Farm Fresh Milk available in the 745ml glass bottle.
Additionally, BDD announced the inclusion of a 2L bottle which will have their famous Farm Fresh and All Lite Milks available in. This new bottle is made from 100% recycled plastics and will be the first 2L milk bottle in Australia made from 100% recycled plastics.
And to end the evening, a special BDD book was launched – Letters to Bannister Downs, and then Some – a collection of a range of wonderful letters, articles, awards, and contributions that BDD has gathered over the years.
